CURRIED RICE

& VEGGIES

300g rice of your choice

1 onion, chopped

2 tbsp oil of choice

1 cinnamon stick

4 cardamom pods, crushed

1tsp curry powder

Vegetables of choice.

Fry the onions in a pan until soft and golden. Add the cardemom seeds and warm through.

Cook rice in a pan of boiling water.

Add the curry powder and cinnamon stick. Boil for 10 mins until rice is cooked. Drain the rice. Remove the cinnamon stick. Stir the onions and cardamom seeds through. 

Serve with veggies of your choice, such as broccoli, beans, peppers, corn, mushrooms. A handful of cashew nuts is also delicious stirred through for some crunch.
