50g quinoa, cooked and cooled
1 tin chickpeas, drained & rinsed
1 cucumber, chopped
2 tomatoes, chopped
1 red pepper, finely chopped
2 spring onions, finely chopped
bunch of coriander, finely chopped
1 tsp harissa paste
1 tsp olive oil
1 clove garlic, crushed
juice of half a lemon
Put the cooked quinoa into your serving dish.
Add the chickpeas, cucumber, tomatoes, pepper and onions.
In a small bowl, combine the harissa, olive oil, garlic & lemon juice.
Pour over the salad ingredients . Season with salt & pepper.
Add the chopped coriander and stir.
